Enoki Mushrooms and Listeria: Safe to Eat, but Cook Them Through
About the article
In late October 2026 the US FDA put some Chinese producers of enoki mushrooms under import surveillance (Import Alert 99-35) because of Listeria monocytogenes contamination. Thai consumers grew worried, but Thai FDA Secretary-General Supaphatra Boonsoem said import records show no enoki from the listed producers has entered Thailand. The agency will still sample more imported enoki for Listeria. Listeria is common in soil, water and the environment, so it can contaminate many crops, but heat destroys it. Enoki is safe to eat as usual if cooked through: above 70°C inside, not raw or briefly blanched, especially in shabu, suki and mookata. Refrigerated food should be kept below 4°C. Restaurants are asked to cook enoki fully before serving, and the WHO's five keys to safer food are recommended.
